LITTLE BEE BUZZ
MAY 2023
Welcome
Hello and welcome to the first Little Bee Buzz newsletter! Charles and I would like to use this opportunity to thank you for your support as we create this unique retreat and venue. Charles and I fell in love with Little Bee at first sight.
It was the dead of winter, January 2020. Even the sleet didn't stop us from exploring the property and marveling at the winter mountain views. We quickly decided we wanted to make our forever home on this land. Then came the task of finding a site to build the cottage, which we wanted to rent to folks vacationing in our area. After carefully considering several sites, our amazing builders, Evert and Brownlee, found the perfect spot for the cottage. Before we knew it, we were building two houses at once! More on that in the next issue.
Three years on, Little Bee Woods is fully operational with its very own newsletter. In each issue, you'll find all the latest news about LBW and the community we love so much. We'll share restaurant recommendations, local events, and our adventures creating trails on the property. Hopefully, you'll book with us in the coming months so you can see why we are so in love with this place. We know you'll love it too.
Happy Spring!

FROM THE KITCHEN
Crostini with Goat Cheese, Roasted Roma Tomato, and Balsamic Reduction
1 baguette, thinly sliced
8 oz goat cheese
Roma tomatoes
chiffonade of basil
1 cup balsamic vinegar
Step 1
For balsamic vinegar, add vinegar to a sauce pan and bring to a gentle boil. Reduce heat and simmer, stirring often, until thick and reduced. The balsamic will thicken as it cools.
Step 2
Slice the baguette on the diagonal into thin slices. Toast the baguette in a 350* oven for 4-6 minutes or until slightly browned. Let them cool completely.
Step 3
On the cooled baguette slices, place a small dollop of goat cheese. Then top with a sliced tomato. Drizzle with the balsamic reduction. Finish with a sprinkling of basil. So simple and delicious!
RESTAURANT SPOTLIGHT
OPEN OVEN
When you come to visit Little Bee Woods, you must pay a visit to Open Oven Brunch and Bakery. Open Oven is a quaint brunch destination located just 20 minutes from us in Black Mountain. Open Oven provides a focused menu offering breakfast and brunch staples. The Black Mountain Benny is a hearty vegetarian breakfast. It's only a homemade sourdough English muffin topped with two poached eggs, avocado, tomato, arugula, and their signature white wine rosemary hollandaise. If omelets are your thing, then go for The G.O.A.T.S., creamy goat. cheese, onion, arugula tomato, and Hickory Nut Gap sausage.
In addition to its thorough menu, Open Oven has a great pastry case with all kinds of sweet treats. The Cheesecake Brownie is as good as it looks, so get one while you're there!
Check out their website before you go at www.openovenblkmtn.com for the full scoop on their menu.
PET CORNER
Little Bee Woods is a pet-friendly cottage, with room for six and your four-legged friend! Please send a photo and brief piece about your pet to Virginia below, and we will feature them in the next newsletter!
Here is a picture of Otis, our special one who gets into everything and has a really good time doing it.
LITTE BEE WOODS EVENTS
Charles and I proudly announce the opening of our micro-venue, The Sweet Spot at Little Bee Woods. Celebrate life's most important moments at The Sweet Spot, a cantilevered platform overlooking a lush forest.
Our venue is surrounded by 13 acres of private forest. The location seems very remote; however, we are only 15 minutes from Interstate 40. The Sweet Spot consists of a platform and a 20"x 30'" tent so the show can go on despite the weather. We can accommodate up to 40 guests for your special event. We have tables, chairs, and other event needs at the venue. We offer valet parking for guests and have several event packages available.
Interested in having a unique and memorable event at “The Sweet Spot?” Please contact us and we can work out the details with you.
